Outer Banks part 1
This weekend we went with all of my family to North Carolinas outer banks, it was so beautiful and we had so much fun! I am going to have to put up pictures in segments though, between my little sister and I, we took over 400 pictures, so there will be a segment or two of the best pictures! Enjoy!

White Coat Ceremony
Today was Jackson's white coat ceremony. They let the students out early to spend time with their families, Jackson and I met at lunch time and we went to a really fun Irish pub for lunch, then we went to the ceremony, which was certainly interesting, one of the speakers told the group that they could decide if they were going to be hairdresser dentists or doctor dentists the difference is that the doctor dentist puts the white coat on his soul not just his shoulders. We laughed afterwards. After the ceremony they took a large class picture and then Jackson gave me a personalized tour of the dental school! It was a fun day!

Chocolate Zucchini Bread
2 ounces unsweetened chocolate, melted
2 cups zucchini, grated
2 cups flours, all purpose
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
3 eggs
1 cup sugar
1 cup brown sugar
1 cup oil
1 tsp. vanilla
1 cup chocolate chips, semi sweet
Prepare two 8x4 loaf pans by greasing and flouring or by lining with parchment paper. Melt unsweetened chocolate and set aside. Wash and grate zucchini, set aside. Measure flour, salt, soda, baking powder, and cinnamon into a bowl, stir and set aside. Place eggs in a mixing bowl and beat. Add the sugars, oil, melted chocolate, and vanilla, beat until creamy. Add the zucchini and stir together. Mix in dry ingredients until incorporated. Add the chocolate chips and mix in. Bake at 325 degrees for 45 to 50 minutes. Makes 2 loaves.
